Banana Bread

Banana bread is a delicious and popular baked treat in my family that can be made with overripe bananas that might otherwise go to waste.


  • 3 large ripe bananas (about 1½ cups)
  • 3 Tbsp. vegetable oil
  • ½ cup sugar
  • 2 eggs
  • 1½ cups all-purpose flour
  • 1½ tsp. baking soda
  • ¼ tsp. salt


In a large mixing bowl, combine mashed bananas, vegetable oil, sugar, and eggs.  Combine flour, baking soda, and salt and add to wet ingredients; stir until just combined. Pour into greased loaf pan. Bake at 350⁰F for 45 minutes, then loosely cover with foil. Bake another 10 to 15 minutes (internal temperature should be 200⁰F).
