Chorizo and Butternut Hash
A hearty and satisfying dish perfect for any meal of the day. We used butternut squash, but any winter squash, or even sweet potatoes would work just as well.
- ½ butternut squash, peeled and cubed
- 3-4 medium potatoes, peeled and cubed
- 1 lb. Chorizo sausage, casing removed and crumbled
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 Tbsp. olive oil
- Salt and pepper to taste
- Poached or fried eggs (optional)
In a large skillet, heat olive oil over medium heat; add butternut squash, and potatoes. Cook, stirring often, until vegetables soften. Add sausage, onion and garlic to the skillet. Cook until the vegetables are golden brown and sausage is cooked through.
Season with salt and pepper to taste. Serve as a side dish or top with poached or fried eggs for a hearty breakfast.
