Homemade tortillas take a little more time than simply opening a package from the store, but sometimes the extra effort is worth it. These have an added flavor boost of roasted garlic.

Ingredients
- 3 cups all-purpose flour
- 2 tsp. salt
- 1 tsp. baking powder
- 1/3 cup shortening
- 1 bulb roasted garlic
- 1 cup room temperature water
Directions
Pulse flour, salt, baking powder, shortening, and garlic in a food processor until mixture resembles coarse crumbs. Add water and pulse an additional 30 seconds, just until dough forms a ball.
Turn dough out onto a lightly floured surface and knead until smooth, about 1 minute. Cover dough with a damp cloth and let rest for 15 minutes.
Divide dough into 10 pieces; cover and let rest 10 minutes. Roll dough into 8-inch circles and cook in a preheated cast iron skillet over medium-high heat until lightly browned, about 1 minute per side. Keep warm on a plate covered with a towel while cooking remaining tortillas.
