A dish that comes together quickly, making it great for a weeknight dinner, or for company. A great way to use your fall apples, onions, and apple cider!

Ingredients
- 1 lb. boneless pork chops
- salt and pepper
- 1 Tbsp. olive oil
- 2 Tbsp. unsalted butter
- 1 large onion, peeled and sliced
- 2 to 3 apples, peeled, cored and sliced
- 1 cup apple cider (or white wine, or vegetable broth)
Directions
Sprinkle pork chops with salt and pepper. Heat a large cast-iron skillet over medium-high heat, then swirl in the olive oil. Sear chops on both sides for a total of about 10 minutes. Remove the chops to a plate.
Melt the butter in the pan. Add onions and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in apple cider. Return pork chops to pan. Cook until pork is tender, about 15 minutes, turning halfway through and covering chops with onion/apple mixture.
